  1. Here is one of my many favourite recipes.

    Finnish Apple Pancake

    Instructions: Preheat oven to 425 degrees F 8 inch (2 L) square baking pan greased.
    Things that you will need:
    2 cups of thinly sliced apples: peeled and cored.
    1 tbsp butter that is melted.
    3 eggs.
    1/2 cup milk.
    1/3 cup all purpose flour.
    1/4 tsp baking powder.
    1/8 tsp baking powder.
    Topping:
    1/2 tsp cinnamon
    1 tbsp granulated sugar
    Instructions:
    1. Place apples and butter in pan; toss to coat. Bake in preheated oven for 5 minutes.
    2. Meanwhile, in a small bowl, whisk together milk, eggs, flour, baking powder and salt until smooth. Set aside.
    3. Topping: In another small bowl, combine cinnamon and sugar. Set aside.
    4. Pour egg mixture over cooked apples; sprinkle evenly with topping. Bake for 15 to 20 minutes or until pancake is puffed and golden brown. Serve with maple syrup.

  2. Sorry about that. In my last entry, after the 1/4 tsp baking powder, I put another 1/8 baking powder. The 1/8 baking powder is supposed to be 1/8 salt. Sorry!!!

  3. Here is another one of my favourite recipes. Guess where they are all coming from: My mom is making them. Well this one anyway.

    Chinese Tortilla

    Things you will need:
    2 cups of boiling water
    1/4 cup of cooking oil
    3 1/2 to 4 cups of flour
    1/4 tsp of salt
    1/4 tsp white pepper, grounded
    1/2 cup of green onions, chopped up

    Instructions:
    1. Mix all ingredients in an electric mixer.
    2. Take the dough out and divide it into 12 small rounds.
    3. Roll each round out to a tortilla size and thickness.
    4. Put a dab of cooking oil in a pan.
    5. Fry it on both sides until it is done.

    PS Sometimes my mom doesn’t even use cooking oil.

  5. Rice Crispy Squares
    Over low heat add a quarter cup of butter into a pan add five cups of mini marshmellows or about forty large marshmellows.Stir till melted and well blended. Remove from heat and add half a teaspoon of vanilla. Add six cups of rice crispy cereal to the mix . Now press the mix into a well greased pan with a buttered spatula.Then let it cool.

  6. Oatmeal Chocolate chip Cookies

    you will need:
    1 large bowl
    1 1/2 cups of butter(room temperature)
    2 cups of brown sugar
    3 large eggs
    1 tsp.vanilla
    1/2 tsp. salt
    1 tsp. baking soda
    1 3/4 cups of flour
    4 cups of quick-cooking oats
    1 1/4 cups of chocolate chips

    Preheat oven to 350 degrees F.Beat butter
    and brown sugar until light. Beat in eggs and vanilla. Add remaining ingredients to the mix. Roll the dough into 2 inch cookies and set them on a non stick or parchment paper-lined cookie sheet. Leave a 2-3 inch space between each cookie. Slightly flatten cookies and bake for 12-15 minutes.

  10. Brownies!!!!!! to die for!
    makes 40 brownies

    Ingredients
    1 saucepan
    2 medium bowls
    1 1/2 cups(3 sticks)unsalted butter
    2 1/4 cups sugar
    2 tbsp. vanilla extract
    5 eggs
    1 cup flour
    1 cup cocoa powder
    1 teas. salt
    optional:1 1/2 cups chopped nuts

    Steps

    1 Line a jellyroll pan with parchment paper. Preheat the oven to 350 degrees farinheit

    2 In a saucepan, melt the butter. Transfer the butter to a medium bowl, add the sugar, and mix well with a spoon. Stir in the vanilla and blend well. Add the eggs one at a time, completely incorporating them before adding the next egg.

    3 In another bowl, mix together the flour, cocoa, and salt. Add the flour mixture to the butter mixture and mix until well blended. If desired, stir in the nuts.

    4 Pour the batter into the saucepan smoothing the surface. Bake from 40 to 45 minutes, until the edges begin to draw away from the sides of the pan.Remove from the oven and cool before cutting into bars.

    Time needed: About 1 hour, including 40 minutes waiting for them to be done.
